A sherry wine is a fortified wine made in Spain, whereas in Portugal a fortified wine is called a Port wine. In Australia, we used to use these names,
but now we use terms like fortified red wine, fortified white wine, apera, topaque and varietal names like pedro ximenez.
Pedro ximenez sherry is made from a white Spanish sherry grape variety called pedro ximenez. Sometimes the Spanish sherry grape is called pedro ximenes or just PX or Pedro X. It has been grown in Spain and made into sherry wine for centuries.
Some synonyms include Pedro Jimenez wine, Pedro Ximenes, Jerez, and in Australia, it is often referred to as Pedro or PX. Pedro jimenez is made in Chile from Pedro Ximenez grapes. The variety Pedro Gimenez, which is used widely in Argentina
for cheap everyday white wines, is unrelated despite the similar name. The other sherry variety from Jerez, the traditional home of Sherry, is Palomino which is much more common there than Pedro Ximenez.
Pedro X is used to add sweetness to blends with Palomino and also on its own to make dark sweet viscous wines, both in Jerez and other regions in Southern Spain.
In Chile Pedro Ximenez is the variety most often used to make Pisco, tho local version of brandy. Like Palomino, Pedro Ximenez wine can also be used to make dry white wine without much character.
In Australia, Pedro X is used to make both fortified and table wines. In the 1950s McWilliams Pedro was one of the first botrytised wines produced in Australia. It is also used to make rich sweet fortified wines but historically Pedro Ximenez's most common role has been bulking up mass produced cheap white wines. How much is in your chardonnay?
To maximize the pedro grape sugar levels the twenty year old PX vines have to be meticulously maintained through the growing season. Only short canes are wrapped down on the cordon wire during pruning. After bud burst, the vine crown is thinned to maximise vine growth from the cordon. Once the fruit has set the two bunches per cane are reduced to one bunch. We call this thinning. After thinning the leaves are plucked by hand around the fruit bunches to allow good airflow.
During the late spring, the vines are then hedged to about a metre in length to reduce the vine canopy. This ultimately reduces vine water stress in the late summer heat.
To make the rich and luscious liqueur PX sherry wine that is renown worldwide the sugar level has to be extra-ordinary high. This is achieved by letting the organic sherry grapes ripen and shrivel as raisins on the vine in the warm autumn sunshine.

Very sweet and ripe and sun-dried organic sherry pedro ximenez grapes are crushed, de-stemmed before being pumped to a fermenting tank. The ferment is started with natural yeasts
and continues at 20C until the ferment has proceeded through about 2-3 degrees of sugar reduction.
The skins are drained and basket pressed, the juice returned to an open fermenter under the winery verandah. The ferment continues at 20-25 degrees Celsius until the wine-maker determines it is the correct time to fortify the wine with organic brandy spirit to raise the alcohol content to 19 per cent. Once the ferment has stopped the wine is pumped to oak hogsheads for underground cellaring and maturation. After a minimum of four years, the wine is bottled and sealed.
This pedro ximenez white wine has organic neutral brandy spirit added and is about 19% alcohol. Some small amount of minimal preservative in the way of sulphites are added. It is clarified and filtered before bottling. Harris recommends consuming within one month after opening, as we want you to come back for more.
